HLTH 610 Life Cycle Nutrition (3) This course explores the role of nutrition through the entire life span. Beginning with conception, pregnancy, early childhood feeding, adolescence, adulthood, and the elderly, each lifecycle is discussed with an understanding of the physiological changes and their implications for nutritional factors. Special emphasis is placed on using this information in nutritional education programming.

HLTH 630 Nutrition Education Methods (3) In this course, students explore the current status of nutrition and nutrition education in the United States and identify the factors that influence nutrition status. Students learn to perform a needs assessment and design and implement educational strategies.

HLTH 645 Nutrition for Health (3) The role of nutrition in maintaining health and physical fitness is studied in relation to the responsibilities and opportunities of a nutrition educator. Current food myths, diets for those in athletic programs, and special needs of overweight and underweight clients are included.

HLTH 655 Vitamins and Minerals (3) This course explores the role of vitamins and minerals in maintaining cellular health through biochemical and physiological mechanisms. Topics provide an in-depth view of specific vitamins and minerals as well as effective ways to translate this information toward efforts for the prevention of chronic disease.

HLTH 525 Health in the School Environment (3) Examine the promotion of healthy behaviors and beliefs in the school setting from early childhood through higher education based on the Center for Disease Control's Division of Adolescent and School Health coordinated school health program model.

HLTH 530 Sports Nutrition (3) This course allows students to translate theory into practice and to relate content to fitness and sports. Included are topics on weight and body composition, eating disorders, and guidelines through proper nutrition. The material covered gives students a comprehensive knowledge of nutrition for use in complementary fields focusing on sport and exercise.

HLTH 570 Strategies for Weight Control (3) This course is designed to address the strategies used to assist in reversing the obesity epidemic. Students gain an understanding of the trends of obesity, risk factors associated with being overweight, and chronic disease patterns. Further, strategies of proper weight management are explored on an individual and societal level, looking at current diet trends and evaluating their health implications.

HLTH 625 Nutrition Epidemiology & Research Methods (3) In this course, students learn how to design, implement, and analyze studies involving nutrition-disease associations. Research methods and challenges are assessed in relation to epidemiology, focusing specifically on food and nutrition.

HLTH 640 Nutrition Program Design (3) Nutrition Program Design introduces students to advanced principles in program planning for nutrition education activities. Building on nutrition education methods, this course emphasizes the development, implementation, and evaluation of nutrition programs to effectively reduce the risk factors associated with chronic disease and improve health.

HLTH 641 Health Communication (3) This course addresses distinct forms of delivering health promotion messages to consumers, professionals, and large groups through various communication methods and social marketing. The course is divided into three modules, covering health coaching, mass health communication, and consumer health writing, and public speaking. Students have the opportunity to coach individuals, advocate for a health issue, or give a presentation on a health-related topic.

HLTH 650 Behavior Change in Health Promotion (3) This course provides students with an overview of the theory and application for assisting individuals and groups change lifestyle behaviors related to health promotion. Includes cognitive behavior techniques to change lifestyle behaviors such as smoking, obesity, stress, or diet for the reduction of chronic disease risk. Students deepen their understanding of select theories and practices necessary for effective health behavior change.

The duration of a Diploma course in Nutrition and Health Education is one year but you could take three years depending on your convenience. The programme is offered in English and Hindi.

Distance Dietetic Program

Designed to be accessible for students who have employment and/or family commitments that preclude participating in a full-time on-campus experience.

The University of Northern Colorado offers a distance-based track of the ACEND accredited Didactic Program in Dietetics (DPD) called the Distance Dietetic Program (DDP). Students complete the same curriculum as our on-campus program, however, it is designed to be more accessible for students particularly those who have employment and/or family commitments that preclude participating in a full-time on-campus experience. The distance track offers 15 courses online; the rest of the required courses are taken at a regionally accredited institution where you live or on-line and they transfer in. You may desire to complete your bachelor’s degree in dietetics or, if you already have a bachelor’s degree, you may choose to obtain a second bachelor’s degree or a certificate. Successful completion of the distance dietetics track will enable you to apply for dietetic internships and graduate schools on your path to becoming a registered dietitian nutritionist. 

The UNC Dietetic faculty will advise you regarding which courses you have taken or are planning to take will fulfill the requirements for distance completion of the Didactic Program in Dietetics. They will help you design your schedule of pre-requisite courses to take in preparation for enrollment in the on-line courses. You may begin taking courses in a Distance Dietetic Program cohort if you have taken the Dietetics pre-requisites, you have been advised by your advisor, you meet the 3.0 or above grade point average requirement and there is space available in the courses. If you do not already have a Bachelor's degree, or if you plan to pursue a second Bachelor's degree in Dietetics, you can complete your first three years of coursework at a campus close to you and the last 30 credits online with UNC.

The Dietetics Program at UNC is accredited as a Didactic Program in Dietetics (DPD) by the Accreditation Council for Education in Nutrition and Dietetics (ACEND) of the Academy of Nutrition and Dietetics . Completion of UNC’s DPD is the first step on the pathway to becoming a registered dietitian nutritionist (RDN) or dietetic technician, registered (DTR). The steps to become an RDN are:

  • Complete a bachelor's degree and receive a verification statement from an ACEND-accredited program ( Didactic Program in Dietetics, Coordinated Program, Future Graduate Program, Foreign or International Dietitian Education Program ) Note, effective January 1, 2024, a graduate degree will be required to be eligible to take the Commission on Dietetic Registration. ( Dietetic registration exam .)
  • Complete an ACEND-accredited supervised practice  dietetic internship program  or  Individual Supervised Practice Pathway  is an option. Supervised practice/experiential learning is combined with the  Coordinated Program, Future Graduate Program, and International Dietitian Education Program .
  • Pass the Commission on Dietetic Registration's dietetic  registration exam .
  • Gain  licensure  in your state of practice, if applicable.
  • Maintain  continuing education .

The Commission on Dietetic Registration website provides information regarding the plan and timeline to initiate the new entry-level practice requirements of earning an advanced degree along with completing supervised practice and taking a registration exam.

MS in Nutrition Programs (with and without Dietetic Internship)

The graduate programs offer advanced study in human nutrition. As described below, Master of Science (MS) degree programs are available for students who do, or do not, have undergraduate preparation in nutrition. Some programs incorporate the Didactic Program in Dietetics (DPD) and/or a Dietetic Internship (DI). The DPD and the DI are accredited by the Accreditation Council for Education in Nutrition and Dietetics (ACEND), 120 South Riverside Plaza, Suite 2190, Chicago, IL 60606-6995; 312-899-0040, ext. 5400.

The Boston University DI is a 29-week, 6-credit course requiring payment of tuition. In addition, a $1,000 fee must be paid to the hospital site. Boston University also has preselect partnerships with standalone DI programs. Students admitted to a preselect partnership program will complete the MS in Nutrition at BU first. After successful completion of the MS, students will complete the DI at the standalone DI program. Start dates, length of DI, rotation schedule, and fees vary based on the DI site. A car may also be necessary to get to the DI site. 

Learning Outcomes

  • Evaluate an individual or environmental-level intervention/policy for nutritionally related disease reduction.
  • Demonstrate the ability to interpret current research in nutrition and health.
  • Demonstrate the ability to critically evaluate media communications with nutrition and disease claims for evidence-based nutrition science content.

Programs of Study

Students interested in advanced study of nutrition science can apply to one of the three MS nutrition program tracks. All MS nutrition program tracks offer core coursework to provide advanced education in nutrition science. All tracks offer a choice between a medical or public health model course to explore prevention of nutrition-related disease risk. In the two-semester MS program, students choose a nutrition-related concentration to complement their study of nutrition science. Upon admission, students (in conjunction with their academic advisor) work to identify a concentration and then propose this to the program faculty, who then approve the student’s curriculum plan. Common concentrations include communications, public health, behavior, and sports and performance.

In the MS nutrition program tracks that include the BU dietetic internship, students are automatically placed in the clinical concentration. This is because accreditation requirements for the dietetic internship require coursework included in that concentration. In the MS nutrition program tracks that include a preselect DI partnership, students may be automatically placed in the clinical concentration based on their DI requirements, or they may choose a nutrition-related concentration based on their DI requirements.

Program Track for Students Interested in Graduate-Level Studies in Nutrition with or without Undergraduate Preparation in Nutrition

Students with or without undergraduate preparation in nutrition who have already earned the Registered Dietitian Nutritionist credential, or those who are interested in graduate-level study in human nutrition combined with a concentration, should pursue the two-semester MS program. This track does not lead to the Registered Dietitian Nutritionist credential.

Program Track for Students with Undergraduate Preparation in Nutrition

Students interested in the Registered Dietitian Nutritionist credential and a career in clinical nutrition/counseling who have received a Didactic Program in Dietetics or Foreign Dietitian Education Verification Statement should pursue the MS (clinical concentration)+BU DI or one of our BU MS+Preselect Standalone DI Partnership Programs. In these programs, the MS must be completed before entry into the DI. Specific admission requirements are listed below. For students in the BU MS+BU DI, the 29-week, full-time DI begins in either June or January following successful completion of the MS program. Students in one of the BU MS+Preselect Standalone DI Partnership Programs shall refer to the standalone DI site policies regarding start date and length of program.

Program Track for Students Who Are Seeking the Registered Dietitian Nutritionist Credential but Do Not Have Undergraduate Preparation in Nutrition

Students without undergraduate preparation in nutrition who are interested in obtaining an MS degree and credentialing as a Registered Dietitian Nutritionist (RDN) should apply to the DPD/MS (clinical concentration)+DI program, which begins in September. In this track, students maintaining satisfactory academic progress in coursework will receive the appropriate Accreditation Council for Education in Nutrition and Dietetics (ACEND) Verification Statement and will be preselected into the DI. Specific admission requirements are listed below. The 29-week, full-time DI begins in January or June following successful completion of the five-semester DPD/MS program.

Advanced Study in Nutrition Science

All programs prepare graduates to critically evaluate and implement the results of current research, solve problems, and communicate effectively. Students study with faculty involved in research, education, administration, professional practice, communication, and consulting. As part of their program, students develop a research proposal and have the opportunity to complete a practicum. Past practicum sites have included large urban hospitals, as part of a nutrition support team; private practice focused on nutrition for athletes; clinical research centers at large teaching hospitals; outpatient cardiovascular clinics at suburban teaching hospitals; and the offices of a nationally distributed nutrition newsletter.

The BU DI has clinical sites at major teaching and community hospitals in the greater Boston area. Students may need a car to get to a clinical site. The clinical sites provide excellent opportunities for students to observe and participate in a wide variety of specialties, such as nutrition support, pediatrics, oncology, nephrology, cardiology, diabetes, surgical care, outpatient counseling, food service, and management. Sites include our preselect partnership programs at Beth Israel Deaconess Medical Center , Delicious Living Nutrition , and Massachusetts General Hospital .

Depending on their program, graduates pursue careers in a wide variety of settings. Clinical environments could include medical and surgical services of hospitals, outpatient clinics, cardiac rehabilitation centers, and private practices. Graduates could also work in the fitness/wellness industry, the pharmaceutical industry, public health, or as consultants to professional sports teams, corporations, and restaurants, or go on to doctoral or medical/dental/veterinary programs.

Admission Requirements

Applicants should refer to the appropriate program track website below for the most up-to-date admission requirements and application deadlines:

  • Master of Science in Nutrition (two semesters)
  • Master of Science in Nutrition (clinical concentration) + Dietetic Internship (MS+DI)
  • Didactic Program in Dietetics/Master of Science in Nutrition (clinical concentration) + Dietetic Internship (DPD/MS+DI)

Degree Requirements

Students are eligible to receive a Master of Science upon completion of a minimum of 32 credits of coursework at the 700 level and above*. At least 25 credits must be taken at Boston University as a degree candidate. Required courses for each program are listed below.

An overall grade point average of B (3.0) or higher must be attained in graduate-level (700-level or above) classes. In graduate courses, no grade below C is acceptable for credit. Additionally, the maximum number of credits with a C or C+ in courses 700 level or above is 8 credits.

SAR HS 704 and SAR HS 811 are tied to the Dietetic Internship. In order to proceed into the Dietetic Internship, students must receive a passing grade for these courses (B– or above). SAR HS 811 is graded on a Pass/Fail basis. Failure to receive a passing grade in SAR HS 811 will prohibit entry into the Dietetic Internship.

A student may complete any of the academic programs on a full- or part-time basis. The DI must be completed on a full-time basis. All programs must be completed within seven years of matriculation.

*NOTE: SAR HS 540 Nutrition for Sports and Performance is the only exception as this course DOES count toward the 32 credits required for completion of any/all of the MS degree programs.

Information Specific to the DPD/MS (clinical concentration)+DI

The DPD/MS (clinical concentration) is a five-semester program. In the Curricula section below, courses are classified based on whether they meet DPD requirements, MS requirements, or both. All DPD Professional courses must be completed with a minimum grade of B–, and DPD Science courses must be completed with a minimum grade of C–. Requirements for completing the MS degree are detailed in the Degree Requirements section. After successful completion of the five-semester DPD/MS (clinical concentration) program, students will receive an ACEND DPD Verification Statement and be awarded an MS degree. They will then be preselected into the DI program. The DI begins in either January or June following successful completion of the DPD/MS (clinical concentration). After satisfactory completion of the DI, which includes documentation of the completion of dietetic competencies and the MS (clinical concentration)+DI program evaluation, students will receive the ACEND DI Verification Statement.

Information Specific to the BU DI

The BU DI is a 6-credit, 29-week, full-time course requiring payment of tuition. In addition, interns must pay a nonrefundable $1,000 fee to their internship site by the end of the first two weeks of the DI. A car may be necessary to get to the BU DI site as some sites are as much as 60 miles from Boston. After successful completion of the DI, the student will receive the appropriate ACEND DI Verification Statement. At this time, the student will have met the academic and core competencies for the supervised practice component of entry-level dietitian education programs as mandated by the ACEND and be eligible to sit for the national registration examination to be credentialed as a Registered Dietitian Nutritionist. Most states in the US require some form of licensure in addition to the RDN credential in some practice settings. It is ACEND’s considered opinion that the program is designed to and does meet all state dietetics licensure and certification laws, though some states may interpret their statutes differently.

All courses are 4 credits unless otherwise indicated. The DI begins following successful completion of all courses in the appropriate programs.

The coronavirus disease 2019 pandemic necessitated the use of distance education, which sparked a technological transformation that was long overdue in higher education. The purpose of this narrative review is two-fold: to summarize the state of knowledge regarding distance education in nutrition and dietetics education over the past 30 years to inform recommendations for future education/research and implications for practice and to determine the influence that distance education has had on the knowledge, skills, and attitudes of both nutrition and dietetics educators and their students. A narrative review of 822 publications yielded 25 that met the search criteria. In the scope of 30 years, the literature shows that attitudes and perceptions of distance education have changed as barriers to online access have diminished and the availability of online nutrition and dietetics courses and Accreditation Council for Education in Nutrition and Dietetics-accredited distance education programs has expanded. However, whereas the limited results are promising, the paucity of large-sample research about the use of distance education in nutrition and dietetics education restricts educators' knowledge of and ability to evaluate the learning outcomes of distance programs and courses. Moreover, differences in how accreditors, government agencies, and institutions define distance education could have significant influence on funding and financial aid benefits for students and research. Recommendations for future research and implications for practice are provided given the relevance and importance of distance education to nutrition and dietetics education.

The 2023 narrative review about the journey of the online dietetics curriculum in the United States published in The Journal of the Academy of Nutrition and Dietetics is an interesting paper that provokes many thoughts about dietetic students’ competency development [ 1 ]. Traditionally, healthcare training has been delivered as a full-time programme requiring in-person attendance. We all recognise that the Covid-19 pandemic of 2020 put distance education centre stage as the sole option to continue delivery of all levels of education for most learners. The almost instantaneous/overnight flip was hurried, due to necessity. This narrative review reminds us that it is now important to embed technological practice transformations as well-supported, planned, and intentional learning activities in the training of healthcare professionals. Indeed, it is incumbent given the expectations of employers and for many regulatory bodies who expect consistent high-quality care that protects service users and the public. Hence the purpose of the review was two-fold:

1. To summarise the state of knowledge regarding distance education in nutrition and dietetics over the past 30 years.

2. To determine the influence online education has had on the knowledge, skills, and attitudes of both dietetics educators and students.

To gather a complete picture of the literature in the field, the authors conducted a search across 5 major electronic databases used in the health/dietetics and education fields: PubMed, the Cumulative Index to Nursing and Allied Health Literature Plus with FullText (Ebsco), CABDirect (Nutrition and Food Science and CABI Direct subscriptions), Medline (Ebsco), and the Education Resources Information Center (Ebsco).

Distance education was defined as education that uses at least 1 technology to deliver instruction to students who are separated from the instructor and provides regular and substantive interaction between learner and instructor synchronously or asynchronously (Open State University of New York, 2022).

The initial search yielded 822 publications that were independently screened by at least 2 of the research team’s experts to include, exclude, or “maybe include” each article. A total of 799 publications were excluded because they fell outside scope; 33 underwent a full text review; and, finally, 25 publications met the inclusion criteria.

Results indicated that barriers to online learning, including attitudes and perceptions of distance education, have decreased over the years. From 1995 to 2005, there was a 10-fold increase in the use of distance education based on a survey of directors of Commission on Accreditation/Approval for Dietetics Education (CAADE)-accredited undergraduate programmes [ 2, 3 ]. Approximately 32% (n = 150) of undergraduate dietetic programmes were offering distance education courses in some format in 2005, although none of the surveyed institutions offered a complete undergraduate programme online. The amount of online delivery reported was higher than anecdotally the level reported to EFAD by universities (higher education institutions, HEIs) delivering dietetics training across Europe.

It is positive that the dietetics profession, together with other healthcare professions, has sought to widen access and participation, hence developments including part time study and placements have occurred. With increasing numbers being trained, innovation has arisen, both in placement hours and varied design as well as setting and mode of delivery.

As dietitians involved in education will appreciate, every learner has different preferences and approaches. It is interesting to consider how much training and competence development can be completed online. The new apprenticeship programmes in the UK have adopted a hybrid approach that is more flexible and inclusive and suits mature students. In a recent study, Eija et al. [ 4 ] aimed to describe the hybrid learning experiences of students in health sciences education. Students felt that hybrid education supported their work-life skills by enhancing their self-management skills and technical competence. On the other hand, students reflected that hybrid teaching has increased their uncertainty regarding their own competence due to a lack of reflection with other students and the educator; the main conclusion of the research was that the success of hybrid education depends on the attitude of the educator and a safe atmosphere.

The most recent EFAD Practice Placement Standards guideline, published in 2022 by the Education and Lifelong Learning Committee (ELLLC), indicated: “Since practice placements are an integral part of any programme leading to qualification as a dietitian, what is being assessed should be carefully considered and approved. Learning outcomes for placement allow students to understand what is expected of them. The number, duration, and range of practice placements vary between programmes, but must be appropriate to support the delivery of the programme and the achievement of learning outcomes”. There is no specific reference to distance learning or simulated blocks of learning; however, future versions of the standard should specify this aspect in some detail.

The paper by Bueche et al. [ 1 ] considers the impact of computer-assisted instruction on learning and the requirements for educators to be appropriately trained for the delivery of distance programmes. Distance educators fulfil several roles in online courses including supporting pedagogical/instructional designer, facilitator, and social, managerial, and technical functions [ 5, 6 ]. Continuous teacher education and access to technical support as well as modern hybrid teaching tools and appropriate facilities are prerequisites for quality online teaching [ 4, 7, 8 ].

Since online education will be the main mode of ongoing lifelong learning for many in the dietetics workforce, development of students’ technological skills is needed. However, the paper indicates that it was not possible to evaluate its impact on learning outcomes and more in-depth outcomes, suggesting that this is an area where ongoing investigation would be helpful.

Appropriate equipment is also required, and Bueche et al. [ 1 ] report that 97% adults have access to a computer in the USA. It is difficult to establish equivalent data for Europe; however, in 2022, nearly 30% of employed people in the EU aged 15–74 reported using digital devices for the entirety or most of their working time (Eurostat News; europa.eu ).

Bueche et al. [ 1 ] finish by outlining the practice implications: “Fostering innovation in nutrition and dietetics education is among the Accreditation Council for Education Nutrition and Dietetics’s (ACEND’s) strategic goals. To ensure the quality of distance education in nutrition and dietetics education: Dietetics educators will need to be skilled in utilising educational theory and best practice in distance education to provide high quality learning experiences for students and ensure competencies are met. They will also need to be supported in the scholarship of teaching and learning with emphasis placed on distance education. The reasons for the lack of research in distance education in nutrition and dietetics education need to be identified and more investigation supported”.

Future work should include HEIs across Europe providing a diversified mode of delivery of the content of both classroom and placement learning activities. The consideration needs to be distance learning (the focus of the current article) as well as simulated and virtual placement activity. For example, increasingly students work with dietitians in private practice and industry, but often not in the same physical location. Long arm supervision by the dietitian educator is provided as exemplified in role-emerging placements [ 9 ]. The advantage to the profession is that these educational opportunities prepare work-ready dietitians to practise beyond health service environments and raise the profile of the profession in addition to ensuring sustainability of placement provision.

In conclusion, to establish the outcomes of such innovation in dietetics education, further research is required. The ELLLC will take the opportunity to explore some of the themes this paper has surfaced with the HEIs in the coming months.

Course Overview

MSc (DFSM) is a multimedia package, which includes print material and audio-visual material. The programme is multidisciplinary in nature. It draws knowledge from disciplines such as Biochemistry, Physiology, Microbiology, Sociology, Biostatistics, Food Science, Management, etc. In view of the above objectives and the nature of the programme, the courses so designed will help the learners:

  • Develop critical abilities;
  • Offer scientific opinion on popular nutrition, dietetics and other related issues and controversies;
  • Acquire a basic grounding in research techniques;
  • Train and develop as a diet counsellor and nutrition/ health communicator;
  • Develop as institution food administrator or food service managers, and
  • Develop entrepreneurship skills

Teleconferencing

Teleconferencing is a one-way video and two-way audio facility. Teleconferencing will be held every month. During teleconferencing session, you will get an opportunity to interact by phone in facility or fax with the resource persons/experts who participate in teleconferencing session and clear your doubts immediately. The teleconferencing facility will be available at the Regional Centre and Selected Study Centres. The teleconferencing schedule will be sent to the Programme In-charge and Regional Director who would inform the students. Teleconferencing is done through Gyan Darshan Channel. You must regularly attend these sessions. These will help you to clarify doubts and interact with other learners all over the country.  

Radio Counselling

Radio counselling will be held through FM. and you can ask questions free of cost with phone in facilities right from your home. A toll free telephone number 110012345 has been provided for this purpose. 

The Programme will also be telecasted through DD metro channel and schedule will be informed to students in advance. 

Audio-video Programme

Audio and video programmes for each course have been prepared to support your learning. These Audio-video programmes in the form of cassettes are available at all Programme Study Centres. These Audio and video cassettes will be provided for viewing and listening. You can also hire the cassettes for viewing and listening. 

You will be required to complete seventy-five percent attendance in theory counselling to become eligible for appearing in Term-end Examination. Similarly, you will be required to complete ninety percent attendance in practical contact sessions to become eligible for appearing in practical examination.

Continuous Evaluation of Theory Component

Assignments

Assignment is a means of continuous assessment of theory and practical. Assignments will help you to recapitulate the theory and go back to the text again in case you are unable to answer a particular question. Thus assignments also help to reinforce learning in distance learning system of education. These assignments consist of a set of questions and activities that you will answer at your own place by referring your blocks.

The assignments will cover all types of questions (long answer type, short answer type, objective type, multiple choice questions and case studies). The assignments will carry thirty percent weightage. You will be required to obtain fifty percent marks as pass percentage in each assignment separately. Each assignment will carry 100 marks. In the final result assignments will carry thirty percent  weightage. 

Term-end Examination

As stated earlier, term-end examination is the major component of the evaluation system and if carries seventy percent weightage in the Final result. The University conducts term-end examination twice a year i.e., in June and December. You can take the examination only after completion of the course, failing which you can take the same in December or June of subsequent years years within the total span of the programme. In case you fail to get a pass score in the Tern-end Examination, you will be eligible to reappear at the next Term-end Examination for that course as and when if is held, within the total span of the programme.
